July is National Ice Cream Month and Today is an entire day dedicated to celebrating ice cream. TasteSpotting is partnering with Dreyer’s/Edy’s Slow Churned Light Ice Cream to feature your gorgeous ice cream cakes, ice cream sandwiches, ice cream sundaes, banana splits, floats, milkshakes, all day.
You will need
Store bought chocolate cookies, large
Ice cream of your desired flavor, mint is especially refreshing
Directions
Spread the cookies with softened ice cream. Top with another cookie. Wrap each sandwich with plastic wrap and place in the freezer until ice cream hardens. Un-wrap and enjoy!

I’m a recovering ice cream sandwich addict. Seriously. I could polish off a whole box at one time. Being able to choose your favorite and ice cream and sandwich it between fresh chocolate wafers…oh, my goodness!
